Bust out the Ginger Snaps!
Our family loves Ginger Snaps! Funny, it’s not one of those cookies that immediately come to mind. You know the ones you buy at the grocery are just not very good. They are hard and crunchy instead of chewey. I think of Ginger Snaps as a cookie that does best in the winter too. Doesn’t seem like a summer dessert but a dark, rich cookie for a cold winter night. Making Ginger Snaps are really easy and they are a close cousin to the Molasses cookie. I love recipes that can easily be morphed into different recipes easily. Also, you can easily adapt this recipe for Vegan use should you want to.
2 Cups flour
1.5 cups butter
2 tsp. baking soda
1 cup sugar
1 egg
1 tbsp. Ginger
1/2 tsp allspice
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp salt
1/2 turbinado sugar
1/4 cup Molasses
To make Molasses cookies simply reduce Ginger to a half tbsp, increase the cinnamon to 1 teaspoon and add 1/2 cup molasses. To convert to vegan simply replace egg with 1/2 cup of applesauce, substitute Earth’s Best for the butter and the regular sugar with turbinado sugar or unbleached raw sugar if available. These are super easy. Simply cream together the butter, sugar and egg. Add sifted flour and spices to the mix. Last add the Molasses. Go ahead and spend a little extra on a high quality Molasses. It will make a difference! Once the you mix all ingredients together chill the dough in the fridge for about 30 minutes. Roll the dough into golf ball size balls or a little smaller and roll the ball into the 1/2 cup of turbinado sugar (white sugar works well too). Place dough on an ungreased cookie sheet and bake in a preheated 350 oven for about 10 minutes. When the cookies crack all over the top, you know they are ready. Let cool for a couple of minutes and transfer to a cooling rack until you are ready to eat them. If you like them firmer you can can bake them for a little longer. We absolutely love these cookies! They are a great idea for dessert when you are not quite sure to make and do well at any party, especially Super Bowl parties!
