There are few things in this world as good as a well made hamburger.  There are many different ways to make burgers.  Some folks like them loaded with lettuce, tomatoes, onions, pickles.  Some folks like them with sautéed onions and mushrooms.  Some people like them with cheese and ketchup and some folks just like them plain.  Regardless of how you like your burger the one thing that is will always come down to is the quality of the meat.  That will make or break a good burger every time.  Grinding your own hamburger meat is the best way to ensure the best quality every time.  The Waring Pro Professional MG1200 Quality Meat Grinder will take care of any meat grinding job you have with ease.  Here is what you get.

The first thing you will notice is the quality of this kitchen tool.  It is heavy and well put together.  It takes only seconds to put together which I show in my video below.  You want a grinder to have ample power and the Waring Pro has power in spades.  It also comes with three difference grinding plates for a rough or finer grind depending on what you want to do.  For the hamburgers we are going to make I use the medium grind.

Why grind you own hamburger meat?   Let’s not talk about pink slime (ick!!!) too much but hey they do put chemicals on the meat to keep that pink color longer and make it look/taste fresh.  Industrial grinding processes can also leave things like bone fragments and who knows what else in your meat.  By blending different cuts of meat we can get superior flavor renderings.  This is important.  For instance, I like to buy ground sirloin at the store.  The fat content is rather bland and the fat content has a lot to do with how the meat tastes.  A typical fat cap (like on a brisket) is much more flavorful than the fat ring on the side of sirloin steak.  We don’t really know what kind of fat comes in your hamburger meat at the store because the corporate processors will mix and match to get he right ratio for profitability.  So forget about all that and go buy these two cuts of meat and we will make the worlds best hamburger.

What we want is fresh meat and flavorful fat.  Don’t worry about how much fat it looks like the cuts below have.  It’s relatively low.  This would be about a 90/10 mix.  Buy the best quality steaks you can afford, it will make a difference!

 

1 lbs Sirloin Steak

1.5 lbs Tri-Tip with fat cap

3 garlic pods

 

What we are going to do is wash the meat (always wash meat) and cut the steak into 1×1 inch squares and peel your garlic.  Place the cuts of meat in a bowl and cover.  You should set the steak in the fridge to chill while you get the grinder set up.  The chilled pieces will make for easier grinding.  The Waring Pro is easily assembled.  The instructions are very straightforward.  As with all new kitchen tools please wash everything first.   You will find that the pieces are well thought out and even if you didn’t ready the instruction manual easily assembled.  I would use the medium grind for making hamburger meat.  After you have set up the grinder on a firm stable surface like a counter-top and the meat has chilled for about 30 minutes we are ready to go.

Turn the grinder on to the “grind” setting.  It’s a little on the noisy side but all grinders are.  Place a bowl where the meat will come off and start dropping the meat piece in one at a time.  You will find the 500 watt motor will grind the pieces with ease.  Drop in a garlic pod from time to time as well. Do not season the meat before you put it in the grinder.  Feed all the pieces until finished.

There are many reasons to grinder your own hamburger but taste is the biggest reason.  You will be amazed. You can see that even though the steak had large hunks of fat on it when it comes out it looks pretty lean.  That’s because it is and that is okay.  The smaller amounts of fat that we used such as the fat cap on the tri-tip is very flavorful in small amounts.  To make a 80/20 ratio hamburger meat would take a lot of fat!  I cannot say enough good things about the Waring Pro Grinder.  One of the things that you will immediately notice when handling the fresh ground hamburger meat is how light and fluffy it is compared to store-bought hamburger meat.  This is another key secret to using you own fresh ground steak to make hamburger.  All of the store-bought hamburger meat will be compressed and “sticky” which will make for a less juicy and hardened hamburger patty….you know what I’m talking about.  Now is a good time to season your fresh hamburger meat.  I typically only use salt and pepper.  Preferably sea salt and coarse quarter cracked black pepper works best in my opinion.
